Classic Pumpkin Soup
A straightforward, genuinely comforting pumpkin soup that makes real headway into a pumpkin glut and freezes perfectly for winter.
Serves: 4-6Time: 45 min
Made with Pumpkin
Ingredients
- 2 tbsp butter or oil
- 1 onion, chopped
- 1 tsp curry powder or grated fresh ginger
- 1kg pumpkin, peeled and cut into chunks
- 1 litre chicken or vegetable stock
- 1/2 cup cream
- Salt and pepper
Method
- 1.Melt the butter in a large pot and cook the onion over medium heat until soft, about 5 minutes. Stir in the curry powder or ginger and cook for another minute.
- 2.Add the pumpkin and stock. Bring to a simmer and cook for 20-25 minutes, until the pumpkin is completely soft and falling apart.
- 3.Blend until smooth, then stir through the cream. Season to taste.
- 4.Serve warm, with crusty bread.
One whole pumpkin usually makes more soup than a glut-sized problem can solve in one sitting. It freezes extremely well in portioned containers, so make the full batch rather than scaling it down.
