Classic Mint Sauce
The old Edmonds-style mint sauce for roast lamb, made properly with boiling water and malt vinegar rather than the bottled version.
Serves: Makes about 1/2 cupTime: 10 min
Made with Mint
Ingredients
- 1/4 cup finely chopped fresh mint leaves
- 2 tbsp boiling water
- 1 tbsp sugar
- 1/2 cup malt vinegar
- Pinch of salt
Method
- 1.Put the chopped mint into a small bowl or jug and pour over the boiling water and sugar, stirring until the sugar dissolves.
- 2.Stir in the malt vinegar and salt.
- 3.Leave to sit for at least 30 minutes so the mint properly infuses the liquid before serving.
This is the straightforward way through a mint patch that's taken over a garden bed; it keeps in the fridge for a couple of weeks, so there's no need to make it fresh every time lamb's on the menu.
