Creamy Celery Soup
A proper homemade cream of celery soup, worlds apart from the tinned version, that puts an entire head of celery, leaves included, to good use.
Serves: 4Time: 35 min
Made with Celery
Ingredients
- 40g butter
- 1 onion, chopped
- 1 whole head celery, chopped (leaves included)
- 1 medium potato, peeled and diced
- 1 bay leaf
- 750ml chicken or vegetable stock
- 1/2 cup cream
- Salt and pepper
Method
- 1.Melt the butter in a pot and cook the onion and celery over medium heat for 8-10 minutes, until softened but not browned.
- 2.Add the potato, bay leaf and stock. Bring to a simmer and cook for 20 minutes, until the potato and celery are completely tender.
- 3.Remove the bay leaf, then blend until smooth using a stick blender or food processor.
- 4.Stir through the cream and season to taste.
Don't throw out the leafy tops when you're working through a celery glut; they go straight into the pot along with the stalks and add plenty of flavour.
