Classic Courgette Fritters
The genuine fix for a courgette glut: fritters that actually hold together, with the one step most recipes bury that makes all the difference.
Serves: 4 (about 12 fritters)Time: 25 min
Made with Zucchini
Ingredients
- 3 large courgettes, coarsely grated (about 500g)
- 1 tsp salt, for drawing out moisture
- 3 eggs
- 1 cup self-raising flour
- 100g feta, crumbled
- 2 tbsp chopped fresh mint or parsley
- Freshly ground black pepper
- Oil, for frying
Method
- 1.Toss the grated courgette with the salt in a colander and leave for 10 minutes, then squeeze out as much liquid as you can with your hands or a clean tea towel. This step matters more than any other in the recipe; skip it and the fritters turn out soggy and fall apart in the pan.
- 2.In a large bowl, whisk the eggs, then stir in the flour until just combined.
- 3.Fold through the squeezed courgette, feta and herbs. Season with pepper.
- 4.Heat a good glug of oil in a frying pan over medium heat. Drop in spoonfuls of the mixture, flatten slightly with the back of the spoon, and cook for 2-3 minutes a side until golden and cooked through in the middle.
- 5.Drain on paper towels and serve warm with yoghurt or sweet chilli sauce.
Courgette fritters freeze well once cooked. Lay them flat on a tray to freeze individually, then bag them up and reheat straight from frozen in a hot oven or toaster. A genuine way through a real glut without eating fritters every night for a fortnight.
