Classic Blueberry Muffins
A reliable, bakery-standard blueberry muffin that stays light and doesn't bleed purple through the crumb, built for using a proper handful of fresh berries.

Made with Blueberry
Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 100g butter, melted and cooled slightly
- 2 eggs
- 3/4 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 1 tbsp extra sugar, for the tops
Method
- 1.Heat the oven to 190°C and line a 12-hole muffin tin with paper cases.
- 2.Whisk together the flour, baking powder and salt in a large bowl.
- 3.In a separate bowl, whisk the sugar, melted butter, eggs, milk and vanilla until combined.
- 4.Pour the wet ingredients into the dry and fold together with a spatula just until no dry flour remains. A few lumps are fine; stirring until it looks smooth is what makes muffins go tough and rubbery.
- 5.Toss the blueberries in a spoonful of flour before folding them through - this stops them all sinking to the bottom in the oven. If using frozen berries, add them straight from the freezer rather than thawing first.
- 6.Divide the batter between the cases, sprinkle the extra sugar over the tops, and bake for 20-22 minutes until a skewer comes out clean.
Resist the urge to overmix once the flour goes in. The batter should look slightly lumpy and shaggy right up until it goes in the oven.
