Espalier is a training method, not a variety or a plant — it takes an ordinary fruit tree and flattens it into a two-dimensional shape against a wall, fence or a simple frame of horizontal wires, instead of letting it grow into a full round canopy. That matters a lot on a small New Zealand section, because apple and pear — the two fruit trees most commonly trained this way — normally want a 4m spot of their own to reach their natural size, with apple settling around 4m tall once pruned and pear reaching closer to 5m. Two patterns cover almost every home espalier: horizontal tiers, sometimes called a cordon form, where paired branches are trained out flat in stacked rows like the rungs of a ladder; and the fan, where branches radiate out from low on the trunk in a wide V. Both rely on the same physical support — horizontal wires strung roughly 30-45cm apart, fixed to a fence or a simple post-and-wire frame — and both are built the same way, by tying young, still-flexible branches down onto the wires and removing anything that doesn't fit the shape.
Training has to start while the tree is young. Apple and pear are both sold and planted bare-root over winter — June to August further north, June and July further south — while dormant, and a young whip at that stage is flexible enough to bend onto the first wire without snapping. Winter, while the tree is still leafless and dormant, is also the main structural pruning window each year afterwards, when the shape is corrected and extended along the wires. A lighter summer prune keeps the shape honest in between, cutting back the vigorous, upright water shoots that both apple and pear throw up through the growing season and that would otherwise ruin the flat, tiered outline if left alone.
Variety choice matters more for an espalier than for a free-standing orchard, because a trained tree is usually a single specimen occupying one length of fence, with no automatic second tree nearby. Apple makes this easy: several popular varieties, including Royal Gala, Golden Delicious, Bramley's and Granny Smith, are self-fertile, so one well-placed espaliered apple can crop on its own. Pear is a different case. Very few pear varieties are reliably self-fertile, so an espaliered pear generally needs a second compatible variety within bee range — Packham's Triumph and Doyenne du Comice are the classic New Zealand pairing — either as a second espalier along the same fence or a neighbouring tree close enough for bees to cross-pollinate.
Both trees are rated intermediate rather than beginner difficulty, and an espalier adds patience on top of that: expect first fruit two to five years out for apple and three to six years out for pear, and several more years beyond that before the wires are properly filled in. The two trees share codling moth as their main pest, but each carries its own extra risk worth watching for. Apple is the one to watch for woolly apple aphid and black spot; pear's particular risk is fireblight, a bacterial disease that blackens blossom and shoot tips as though scorched, and pear and cherry slug, a small black larva that skeletonises leaves over summer. Both want full sun and moderate, consistent water, which a sunny fence line usually already provides.
None of this replaces a full-sized orchard tree at full output — a mature, free-standing apple or pear can carry 20-40kg of fruit in a season, and a two-dimensional wall of branches on a single strip of wire won't match that volume even once it's fully grown in. What it does do is turn a metre-wide dead strip beside a driveway or along a boundary fence into a genuine home crop, which is the actual trade a small-garden grower is making: less total fruit than a full tree, produced in a footprint that would otherwise have grown nothing at all.
